Tomato Eggs with Herby Varoma® Vegetables

Method

A warm plate that shows how simple ingredients can become something special.

  1. Chop the onion and garlic, then cook gently until softened and fragrant.
  2. Add tomatoes, smoked paprika, salt and pepper, then simmer into a rich sauce.
  3. Steam sliced vegetables above the sauce until tender.
  4. Add the eggs to the tomato base and cook until set to your liking.
  5. Finish with fresh herbs and serve with toast, rice or a simple salad.
